Whether green, white or black tea, the tea leaves used in all of these teas come from the same plant. The difference lies in the way the leaves are processed. For green tea with its smooth taste and mildly stimulating effect, the freshly picked leaves are gently steamed, which closes the cell pores so that the cell sap stays in the leaves.The preparation of green tea is an art in itself but essential as incorrect brewing will result in a bitter taste. A porcelain or glass teapot should be used. The water used to brew the tea should NOT BE BOILING but instead be between 70 deg C and 90 deg C.
